Get out your best china, tablecloth, candles and flowers! Select soothing background music. Chill a bottle of white Chardonnay. Watch a French movie afterwards. Dinner for two in Paris!
Dr. Joy’s Golden Recipe: Chicken Condon Bleu
Preheat oven to 350 degrees. Rub oil in a baking pan to prevent sticking.
2 chicken breasts, skinless boneless (don’t cut in half)
2 slices cooked ham
4 slices of Swiss cheese
1/3 cup seasoned bread crumbs
Sprinkle chicken on both sides with salt and pepper.
Place 1 slice of ham and cheese on each half and fold the other half of chicken breast over it.
Place in baking dish and sprinkle breadcrumbs over the top.
Bake until chicken is done (about 30 minutes).
Melt 1 slice of cheese on top of each serving in oven for 2 – 3 minutes. Serve hot.
Buttery French Green Beans (Do this while chicken is baking.)
Wash 1 pound fresh green beans, trimmed, cut in half.
Place in large skillet and cover with water. Bring to a boil.
Reduce heat and simmer about 5 minutes until beans begin to soften. Pour out water.
Add 2 – 3 tablespoons butter to skillet. Cook and stir until butter melts.
Add 4 cloves whole garlic (peeled) and a pinch of salt, pepper and stir until beans are done. Drizzle 1 tablespoon of lemon juice on beans just before serving.
Chateau Potatoes (Prep and steam this dish in advance. Brown potato rounds while chicken is baking.)
Wash 3 pounds small New Potatoes. Peel and slice in rounds.
Cook in steamer pot with water until almost done.
Gently remove and place in large skillet with 3 tablespoons melted butter.
Carefully move around in skillet to brown potato rounds.
When potatoes are fully cooked and browned sprinkle fresh chopped parsley on top and serve.
