Cooking a nutritious meal doesn’t have to take hours. Especially in these challenging times when parents have to be business owners or employees, and home school their children too. These recipes are for you!
Easy Turkey and Green Bean Casserole
Preheat oven to 350 degrees
Sautee 1.5 pounds of ground turkey in large skillet on medium heat.
Peel and slice 3 large potatoes. Layer in bottom of greased medium casserole dish.
Cover potatoes with several pats of sliced butter, salt and pepper.
Add I can of green beans to layer on top of potatoes.
Pour 1 can of Cream of Mushroom soup (undiluted) evenly over the green beans.
Spread the browned ground turkey evenly over the top.
Pour a second can of Cream of Mushroom soup (undiluted) evenly over the turkey.
Put the lid on the casserole dish and bake at 350 for about an hour or until done. Serves 5.
Irish Steak and Potato Stew
Heat 1 tablespoon Olive oil in large pot on medium heat. Cook 1 pound of beef steak, 1 inch cubes.
Add to pot 1 large chopped onion sauteed in oil, 10 baby carrots, 2 ribs of chopped celery.
In a small bowl add 3 cups gravy, 2 beef bouillon cubes, ¼ cup Worcestershire sauce, 1 pinch oregano.
Cover pot and simmer for 1 hour.
Add 8 whole baby potatoes to pot.
Simmer about 30 minutes until potatoes are done. Serves 4.
Super Salad Meal in a Bowl
Toss in a large salad bowl:
4 cups Cruciferous Crunch Mix (Kale, Brussels Sprouts, Broccoli, green and red Cabbage)
1 cup each chopped carrots
1 cup chopped walnuts
2 cups Spring Lettuce Mix (Mizuna, Crisp, Tango, Oak Leaf, Chard, Spinach, Arugula, Frisee, Red Leaf)
2 Roma tomatoes, sliced
Add 2 cups cooked chicken, beef, turkey or salmon (leftovers or canned)
Vinaigrette Dressing
Combine 1 cup extra virgin olive oil with 1 cup balsamic vinegar, 2 teaspoon ground mustard, pinch of salt and pepper. Shake well in jar. Drizzle on salad before serving. (Store extra in jar in refrigerator.)
