Dr. Joy’s Golden Recipe Collection
Dr. Joy’s Spilt Pea Soup
Bring to boil 6 Cups of Pacific Brand vegetable soup stock
Add the following to the soup pot:
1 Diced yellow onion and 2 Peeled Cloves garlic sautéed in grape-seed oil
2 Cups green split pease, uncooked
2 Carrots diced
2 Stalks celery, diced
1 Tablespoon Nutritional Yeast and salt to taste
Options: Add 1 Cup cut ham in small cubes, 1 medium potato, diced
Simmer covered on Low until peas are done, about 20-30 minutes.
Serves 4
To Puree: Keep warm on burner until ready to serve, then partially puree soup with immersible blender in pot using a pulsing on/off method.
